This blend is made of 2/3 young Lambic and 1/3 old Lambic. The bottles, with the wild-spontaneous yeast flora, are refermented in the cellar (Method Champenoise).

  2. typically aged for 2-3 years to produce a dryer, fruitier and more intense style of Lambic.

  3. no hop character, some are filtered and force carbonated if not pasteurized as well.

  4. sourness can be pretty intense.
